Be careful Tim, they cant help themselves. That's why there are so many catfish, Charles is on hiatus.

For all you Charles wannabees: Take tin snips right down the back then filet outwards. You will get 2 nice tenderloins from each side. The one I dressed was 48". The flavor was quite good. The texture reminds me of a very, very, tough crawfish. Don't make the mistake of frying it like I did. Its more suitable for a stew or gumbo.
I dressed it at the landing, threw it on ice and noticed a knuckle on my left hand was a little red. No cuts or anything. Just red. I assumed a spider bite or something. The next day my hand was a little swollen. The 2nd day it looked like a balloon. So, off to the urgent care I went. They gave me steroids, a antibiotic and after several weeks its almost back to normal. I still have a small knot on the knuckle.
Even though I believe it would be excellent in a gumbo or jambalaya. I doubt I'll ever find out. I love eating strange things. But this one has me being cautious.

Doesn't look like your injury is keeping you from some stellar catches! I saw on Kayak Wars the you've had a couple of great slams lately:
40" gar, 9" bream, 28" catfish!
38" gar, 20" mudfish, 24" bass!

Oh, just saw you posted! Yikes!!! That infection sounds scary!!! Whew! I gripped one near the head and gills and got sliced up pretty good. Could have happened to me!
