Many years ago, the guides out on the Big Horn River (MT) would have an annual Carp Tournament in the lake above the river. I would get an invite to fish the tournament with a friend/gude who worked out there. I can remember that one of the most popular baits was a kernel of corn. We would also use a dough ball made from bread/wheaties. We used fly rods so the baits were on the small side. I'm sure you could go to some of the specialized websites for carp fishing and get a full answer to your question.

the problem with dough / bread balls is that they don't stay on the hook that well. we used to use bisquick, real sticky and ghooey.
